For the Best Home Made PIZZA

So today i'll wright the recipe for the Pizza, but unfortunately i don't have pictures, when i made it, i didn't even have thoughts, that i'll start my blog later.


Original recipe was for a lot of dough ( approximately for 30 pizzas, but i have shortened it for 6), also i've weighted all ingredients on the scale and written them in grams.


For the beginning to help you i can only give you pictures of the products that i have used (hopefully that will help)

for the Flour ( i've tried a lot of different types) this one was the best.

for the yeast ( it was very hard, there are a lot of variety of yeasts)

finally we are ready for the dough


You will need for the first step :


For the BIGA ( sort of Sour Dough).


188 gr. of water

2.5 gr. of yeast

417 gr. flour

Mix these well and leave in the fridge for 1 to 3 days

( i was taking it out from the fridge at night, and putting back in during the day)


after 3 days for the FINAL DOUGH

you'll need :

Second Step :


250 gr. water

1.5 gr. yeast ( around half of 1/8 tea spoon)

417 gr. flour

mix these well

add 24 gr. of Salt


187 gr. of water

but this time you'll need some patients, because you're going to add this water little by little.


When your dough will come together, take it from your bowl and knead it for couple of minutes with your hands. Don't add flour during kneading if dough will start to stick, on your hans, use olive oil.

and finally Divide your dough into 6 pieces ( better to weight them) they should be around 280 gr. each.


take 6 small bowls, oil them with olive oil put your dough in the bowls slightly ( veeery easy) oil the upper part of the dough, and cover the bowl.


Put you bowls with the dough in the fridge and leave them at least for 24 hours before use it.

HOW BAKE YOUR PIZZA !

Take your dough from the fridge 1 hour before baking ( let in become room temperature).

First, take everything out from your oven.

put your pizza stone on the bottom of the oven.

On the second lever from the top put one oven rack

Preheat the oven for 550 F.

take your pizza peel spread easy Semolina flour on it ( it will prevent your dough from sticking on the peel, also will help to bake the bottom of the pizza better)

As soon as your oven hit the 550F put your ready Pizza on the Pizza stone and TURN OFF your oven. Waite about 4-6 minutes, then turn on oven broil. Take your pizza from the stone and put it on the oven rock. Wait until the dough become golden on the top and then you pizza is ready to serve!!!
